  • 1 teaspoon vanilla extract
  • 3 tablespoons water, plus more as needed
  • 3/4 cup (180g) quark cheese

Instructions:

1. Preheat oven to 350F (180C). Line an 8×8-inch square baking pan with parchment paper and set aside. In a medium bowl, whisk together oats, flour, baking powder, cinnamon and salt until combined. Set aside.

2. In a large bowl, combine peanut butter and honey until well blended. Stir in vanilla extract and 3 tablespoons water until combined. Gradually beat in oat mixture until blended. If dough is too dry, add additional water 1 tablespoon at a time until desired consistency is reached. Fold in quark cheese until evenly distributed throughout the batter.

3. Transfer batter to prepared pan and spread evenly. Bake for 25 minutes or until edges are golden brown and center is set. Allow to cool completely before slicing into bars. Enjoy!
