Ingredients:
- 1 large red pepper, halved and seeded
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (125g) quark cheese
- 2 tablespoons plain Greek yogurt
- 2 tablespoons lemon juice
- 3 tablespoons chopped parsley leaves

1. Preheat a grill to medium heat. Brush pepper halves with olive oil and season generously with salt and pepper. Place peppers on the grill, cut side down, and cook for 6-7 minutes per side or until tender. Remove from grill and let cool slightly before thinly slicing.

- 1 cup (130g) oats
- 1/2 cup (75g) whole wheat flour
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup (110g) peanut butter
- 1/4 cup (50g) honey
- 1 teaspoon vanilla extract
- 3 tablespoons water, plus more as needed
- 3/4 cup (180g) quark cheese
Instructions:
1. Preheat oven to 350F (180C). Line an 8×8-inch square baking pan with parchment paper and set aside. In a medium bowl, whisk together oats, flour, baking powder, cinnamon and salt until combined. Set aside.
2. In a large bowl, combine peanut butter and honey until well blended. Stir in vanilla extract and 3 tablespoons water until combined. Gradually beat in oat mixture until blended. If dough is too dry, add additional water 1 tablespoon at a time until desired consistency is reached. Fold in quark cheese until evenly distributed throughout the batter.
3. Transfer batter to prepared pan and spread evenly. Bake for 25 minutes or until edges are golden brown and center is set. Allow to cool completely before slicing into bars. Enjoy!
